Using "the language of cooking without recipes" study the theory, and techniques of using plant-based ingredients in the forms - cookie & bar, quick bread & scone, custard, pie, cake and frosting. Learn to use alternate unrefined flours, natural sweeteners, and oils to make your desserts fit your dietary and artistic preference. This course can accommodate the elimination of gluten and does not use, dairy, eggs, or butter.
